Oatmeal cookies. It’s a childhood staple. My mom was never a baker, but we would always have oatmeal cookies around. Right now, its cold and I need some warmth in this house. Also, this cold weather is making my allergies go crazy. We had over the weekend and then it went to “feels like 2 degrees”. My boricua blood is not used to this and I have lived in the US (mainly the Midwest) since 2013.

I like to add a half a cup of almond flour. It adds to the chewy factor for the cookies. It also adds a little bit of nutty flavor. You can make these cookies completely gluten free by using almond flour as your main flour. These cookies are delicious. Make your house smell heavenly. Here’s my Brown Sugar Oatmeal Cookies!

Can you eat this cookie dough all day? I can.

Makes 24 – 30 cookies
Depends on the size of a cookie/ ice cream scoop that you use. I had a
smaller ice cream scoop so it made 30 cookies.

Oven 350 degrees
Cook time: 13-15 mins. (More if you want them crunchy. 11-12 minutes if you a super soft cookie).
Rest time: 10 minutes (20 if you are are good)

Make them all extra: Add some brown sugar on top, chopped nuts or eat them as is!
