Thanksgiving week is here. Even if you celebrated this past weekend, on Thursday or even this upcoming weekend, the Holiday season (at least here in the US/PR) has officially started. This weekend is also the first week of advent, so it is throwing everybody for a loop. I know it has for me.
I always have had (what it seems like) a buffer week between Thanksgiving and the official start of advent, which meant, you can actually have somewhat of a break. Not this year! This year we start and we keep on rolling!
This post will have WHAT will I will be the menu this year for Thanksgiving. This is officially the first time I host Thanksgiving and am cooking most of the meal. Every year my partner in crime, Eric, does it since he is the one who invites his family over and I tag along. Not this year! It’s my Thanksgiving and we’re going with it.
Back home, (when my mom had an oven, now she just orders the meal over and she makes sides) we have what we call pavochon. Remember that pernil recipe that I have shared it in 2 ways: oven and Instant Pot? Well we riff on that and essentially treat the turkey as a huge piece of pork. It’s garlicky , salty, and oh so good.
If you have apple news plus or a Bon Appétit subscription, this year I am using their method of “The Best Thanksgiving Ever” and asked the meat counter butches extraordinaries in Fareway to butcher my turkey. You could also spatchcock your turkey, which I show how to spatchcock a chicken here. Turkey is essentially a big turkey, so its the same method.

- Mashed Potatoes
- Gravy
- Stuffing (friend is bring this)
- Coquito (obviously)
- arroz con habichuelas (rice with beans)
- Turkey; pavochon style (duh)
- Espresso Creme Brûlée (Friend is bringing this)
- Roasted Brussels Sprouts. We do need some kind of green vegetable
- Homemade Ice Cream (if I’m feeling adventurous)
- Pie (friend is bringing this)
