This is a simple recipe. It’s more of a method really. There is no “inspiration” behind it. I worked for 6 hours straight after waking up at 5 am and only having coffee in my system (3 cups, to be exact). Realizing that I haven’t eaten anything all day, I spoke (to no-one) I AM HUNGRY! (some curse words in both Spanish and English) and realized that I didn’t have anything for groceries. Opening the pantry I spoke again (to no-one)” where’s the granola!?” fully realizing that…. I had no granola because I hate the granola bars that are in the grocery store. I then proceeded to make granola.
I know. Very anti-climactic. I could go on and tell you that I was walking during on the sidewalk last week when it felt like fall with (my ugg boots and a PSL in hand) and had a magical evening. But I won’t, because that did not happen, I am clearly not a 13 year old suburban girl, and (no shocker to anybody) I don’t have ugg boots. What I do have is about 5 cups of newly fresh warm granola that taste amazing. Here’s how I made it.
Oven temp: 350
Makes: 4-5 cups
Most, if all, ingredients are swappable. I literally used what I found in my fridge, pantry, and freezer. The big things to think of is the 3: .5: .5 (oats, oil, sweetener).
3 cups of rolled oats (not instant)
1/2 teaspoon of ground cinnamon
heavy pinch of kosher salt
1/2 cup of maple syrup (or honey/agave)
1/2 cup of coconut oil
1.5 cups of your desires, wishes and dreams (I used a combination of peanut butter chips, pecans, almonds, and rainbow quinoa)
- Preheat your oven for 350 degrees.
Combine all the dry ingredients (everything except the oil and maple syrup), to a large bowl and mix together.
Note: if you are using any peanut butter chips or chocolate, leave them out until the granola finishes cooking in the oven.
- Heat up your coconut oil into a liquid state (I added two big spoonfuls of coconut oil into a measuring cup and added said cup to a bowl that had hot water. It liquified in about 5 mins, if not less. The steam/heat of the water helps liquify it). Add your maple syrup (or honey). Whisk well.
- Combine both dry and wet ingredients using a spatula (for ease, I used a silicone spatula).
- Add your granola to a baking sheet lined with parchment paper. Cook for 15 mins. Take the granola out and mix. Place back in the oven and cook for 15 more minutes.
- Take granola out and add any ingredients that would have melted if you put them in the oven (things like: peanut butter chips, chocolate shavings or chips, mini marshmallows, etc).
- Let cool in the baking sheet (it will harden as it cools down). Clump it up as much or little as you would like. Store in mason jars! Eat in parfaits, with milk, or by the handfuls.
