Mom’s pancakes

Most of my family has a sweet tooth. For some reason I love sweets. I remember mom getting angry at dad because he would eat a TON of candy and she would find the wrappers in their bedroom.

My mom sometimes babysits by brothers kids, Kendra and Fernando. I believe Fernando has the biggest sweet tooth of all, only to be rivaled by his older cousin Diego (which is my sisters second kid). Diego and Fernando would drown their pancakes, waffles or French toast sticks in syrup if they could.

My mom always would make pancakes on demand for her grandkids, but also for me when I was younger. Breakfast was always my favorite part of the day and now that I’m an adult I often forget to eat it. Possibly because I sleep in or most of the times its because I teach, so I just chug coffee and be on my merry way. When I want a pick me up, I always make mom’s pancakes. Which is a very simple recipe, but it still awesome.


  • 1 1/2 cup of AP flour (if you want gfree you can do so!)
  • 3 1/2 tsps of baking powder
  • 1-2 tablespoons of white sugar
  • 1 1/4 cup of milk (I use 2%, but I have made it with whole milk or coconut milk)
  • 1 egg
  • 3 tablespoons of melted butter
  • 1/2 tablespoon of cinnamon
  • A splash of vanilla extract
  • Maple syrup (to drown your pancakes in)
  • Butter (for the skillet, I use 1/2 a tablespoon per pancake or less, depends on how buttery you want your pancakes to be)

How to make them:

  • In a large bowl, sift all the dry ingredients
  • Make a well in the middle and add all of the wet ingredients (milk, butter, extract, egg)
  • Optional: let it hang for 2-5 mins for optimal yumminess
  • Use a 1/4 cup as your scoop per pancake
  • In a medium high heat (you can use non stick, cast iron, what have you) put butter in the pan and when its all melted add the pancake batter.
  • Wait until the pancake is starts to have bubbles in the raw side (2-3 mins)
  • Flip and give it at least 2-3 mins until your optimal crispness


This recipe makes 8 pancakes so perfect for 2, you can cut in half or make more if you have to feed your whole family.
