Alison’s Roman Spicy Bean Stew

By now, you should know that I am an Alison Roman. While I haven’t done #thestew or her Spiced Chickpea Stew with Coconut and Tumeric. While I haven’t done that one. I saw her #thestew2 and I was all over it. This spicy white bean stew is AMAZING. I literally recreated this stew from the YouTube video 2 days after because I could not stop thinking about it.

If you have the New York Times Cooking subscription, you are in luck and you can get the ACTUAL, original recipe. I unfortunately, do not, so I improvised.

Alison’s #thestew2 is amazing and it should be part of your staples. Why? It is literally parts of anybody’s pantry. White Beans, tomato paste, red chili pepper, olive oil, and onions. Keep reading for my version or Alison’s stew. Hopefully in one day she will come to the Midwest OR I would be in the east coast and could see her in a book signing.


  • Greens (I had a mix of leftover greens: kale, arugula, parts of romaine)
  • 1/4 cup of olive oil
  • 7 cloves of garlic, sliced. I love garlic, ok.
  • 1 medium yellow onion
  • 5 tablespoons of tomato paste
  • 2 tablespoons of crushed red pepper flakes. I like it spicy,
  • 3 cans (15.5 ounces) of white beans; drained.
  • 4 cups of chicken broth
  • 1 lemon, halved, for squeezing.
  • Parmesan cheese
  • Parsley (to top)
  • Salt and Pepper.

How to:

  • Heat the oil in a Dutch oven on medium high heat. Add garlic and onion. Season with salt and pepper. Cook, stirring frequently until golden brown. 7-8 mins.
  • Add tomato paste and chili flakes. Cook for 3-4 minutes until it looks super fire-y read.
  • Add beans and season with salt and pepper. Add the chicken broth. Bring to boil, reduce to simmer and cook for 30 mins.
  • One its cooked to your stew-y perfection, in a bowl add the greens. If you are using heartier greens like Alison (follow her instructions). I had less sturdier greens, so I added them to the bowl THEN add the stew.
  • Top with olive oil, parmesan, more chili flakes if you want. Eat by itself. You can top it on some rice, or like me, eat with some homemade crusty bread! My recipe for bread is here.

Thanks Alison Roman for this AMAZING stew. Even though I subbed some ingredients from your video, this is a recipe that will be in my rotations for months to come. #thestew2

  1. not a useable format poorly written recipes with instuctions on left out ie when is the lemon added? Just not edited well. not worth the trouble

    • Hi Kat! What were you looking in the recipes that you consider mine as “written poorly”. My apologies on the lemon! I squeeze the lemon at the end. I’ll make sure to change that.
