Raspberry Chia Jam

I found this recipe in the Allspice Cullnarium website via a newsletter that they had. Here’s their recipe. I added some honey and lemon to make it my own and give it some zip.

INGREDIENTS
2 Cups frozen raspberries, thawed
2 Tbsp chia seeds
2 Tbsp warm water
1/2 tsp Vanilla Extract, Tahitian
2-4 Tbsp Maple Syrup

STEPS
Combine frozen fruit, chia seeds, water, vanilla and 2 Tbsp of the syrup to a food processor or blender. Add some honey, I added about half a tablespoon.

Pulse the mixture in short bursts until you reach desired texture. Taste as you go, and add more maple syrup if need be. I added some lemon zest at this time to make it AMAZING.

Transfer berry mixture to a lidded glass jar, and allow to chill in the fridge for at least one hour.These made 2 8 ounce containers.

Enjoy up to 2 weeks, if it lasts that long!
